Acetic Acid - Used in royal icing to ensure quick drying and a more even texture. It also helps keep the icing consistent to minimise sagging.  Add by the drop to achieve the desired effect as too much can make the icing brittle.

Walocell -Strengthens fondant and royal icing - use 1 - 2 teaspoons/ kilo and knead. Add to flour when baking to slow down the hardening of baked goods. Dust onto baked surfaces before adding toppings to minimise seepage - eg. tomato into pizza. This can also be used to reduce oil absorption into food when frying and, when mixed with water, will make a food grade glue.
